Humidity also plays an important role because the rate of water evaporation of the egg depends on the relative humidity of the surrounding environment. The relative humidity should be increased to about 70% during the last three days of incubation to keep the egg membranes from drying out after the chicks crack.
Low humidity should be maintained for the first 18 days to ensure adequate water evaporation. The placement of eggs in the oven can also affect the incidence of hatching. For best results, lay the eggs upside down (head down) and frequently invert them (at least three times a day) until one to three days before they hatch. If the egg is not turned over, the embryo inside may stick to the shell, causing the hatching to become defective.
